Ingredients

4 x chocolate brownies
1 x Jar of cherries soaked in brandy stoned
1 x 500g tub mascarpone cheese
Icing sugar
1 x bar of good quality white chocolate
Knob of butter

Drunken Cherry Cheesecake

Method

1. Break up your chocolate brownies into a bowl and add a small knob of butter. Pop into the microwave and heat until the butter has melted.

2. Mixed the brownies with the butter until they are well stuck together. Add more butter and heat again if required.

3. Push the melted brownies and butter into the bottom of a round tin (one with removable sides or a base that come out will be ideal).

4. Put into the fridge to cool and set.

5. Empty the mascarpone cheese into a bowl and slowly add icing sugar mixing all the time until it becomes sweet to taste.

6. Add the cherries - leave a few over to decorate - and some of the juice into the mixture.

7. Place the mixture on top of the base and smooth out.

8. Add a couple of cherries on top to decorate.

9. Using a sharp knife run it down the side of the white chocolate to make curls.

10. Make as many curls as you wish and sprinkle over the top of the cheesecake.

11. Place back into the fridge to cool and set for at least 3 hours.

12. Remove the cheesecake from the tin (easier if you have removable sides or based tin) and serve.
