9oz caster sugar

Lemon PossetMethod

1.Squeeze lemon, mix juice with sugar till dissolved peel lemon with potato peeler, taking care to avoid too much pith.

2. Add juice/sugar combo to cream in pan, add peel bring to boil, simmer for a couple of minutes, stirring constantly.

3.Strain to remove peel

4.Pour into ramekins/serving bowl

5.Refrigerate until set.
